Try this uber quick and tasty recipe:
- 1 whole cauliflower
- 1 brown onion
- 500 ml of chicken or vegie stock
- Clove of garlic (optional)
- Cashew Milk 150 ml (or milk or choice)
- Turmeric powder- add to taste approx 1/2 tsp Turmeric is an amazing anti inflammatory Steps:
- Pre heat oven to 200c
- Prep time 5 -8mins
- Remove leaves and chop Cauliflower into large chunks, quarter the onion, peel the garlic, place into baking tray, drizzle with olive oil, season with salt and pepper
- Bake until golden approximately 20mins
- Blend cauliflower, onion and garlic with stock
- Add blended mixture to saucepan add cashew milk
- Bring to boil, simmer for 5 minutes and serve with a drizzle of truffle oil, salt / pepper to taste
